Eat your veggies

Have you ever been to salad making party? I hadn't until a friend invited me. I thought why not? I like salad. Turns out is a great idea where everyone brings a different ingredient, you bring your mason jars and your just go through an assembly line of sorts layering in your favorite salad fixins. Best part is, enclosed in the mason jars the salads last for about a week. So it was great until I ran out.


I'm not a great planner when it comes to food prep, particularly having enough fresh fruits and veggies around and I really don't like being at the grocery store every other day. So when I was out, I was out and wishing for another jar full of salad.


Let's face it, it's tough to get all the veggies we need. Most of us if we were honest aren't huge veggie fans or put another way there are likely other things we'd rather eat.


The CDC recommends 2-3 cups per day of vegetables yet only 1 in 10 Americans meets that recommendation. Missing out on this puts us at risk for chronic diseases like diabetes and heart disease due to the lack of essential vitamins, minerals, and fiber that vegetables offer.
